Description

  • 1 onion, diced
  • 1 large carrot, diced
  • 2 celery stalks, diced

  • ½ cabbage, chopped

  • ½ teaspoon salt
  • Cracked black pepper, to taste
  • ¼ cup roughly chopped fresh parsley

  • 1 (14-ounce) can diced tomatoes
  • 4 to 6 cups vegetable broth
  • 1 to 2 tablespoons lemon juice


Instructions

  1. Cook the vegetables. Heat the olive oil in a large pot over medium-high heat. Add the diced onions, carrot, and celery and cook for 4 to 5 minutes until they start to soften.
  2. Add the aromatics. Stir in the minced garlic, dried oregano, dried basil, and salt. Cook for another minute until fragrant.
  3. Add the cabbage. Add the chopped cabbage to the pot and let it sweat for 5 minutes, stirring frequently to combine and soften.
  4. Let it simmer. Pour in the vegetable broth and the canned diced tomatoes. Bring the soup to a simmer and cook uncovered for 10 minutes or until the vegetables are tender to your liking.
  5. Finish and serve. Remove the pot from heat and stir in the lemon juice, fresh parsley, and cracked black pepper. Mix well and serve warm.

Notes

  • To store for the week: Let the soup cool completely before transferring to an airtight container. It will keep for 4 to 5 days in the refrigerator.
